On Monday it never seems like we’re really going to make it to the end of the week, but we always do and it usually seems to be faster than we expected. I’m always reminded of the saying don’t wish your life away, and it’s not that I want to lose time with my life rushing by on fast forward, I just want to be off for a few days. It’s kind of like watching TV without the commercials, I just want to get to the parts where I get to relax and just do what I want, not what I have to…..sigh
But today is a day that I get to do what I want, my happy day of the week, the day I get to share my blog with one my friends! It’s Guest Post Friday! I do love Guest Post Fridays, not only do I get feature a fabulous foodie friend, but it’s the beginning of the weekend……life is good!

Hi folks, I’m Anita from Hungry Couple and I’m so excited to be here today! My blog is based on living a balanced life. That means working hard but always taking vacations, daily exercise but also sleeping late on Sundays and most importantly, eating healthy but also occasionally indulging. Brian is my partner in life, food and crime and as our tag line says, we love each other and we love food.
I’ve been faithfully reading Chef Dennis since I started blogging. Anonymously at first, too timid to comment but quickly working up the nerve to comment regularly, stalk the poor man on other social media sites and then publicly and shamelessly hint that I’d like to guest post. Heaven only knows what I’ll be asking for next…his house keys, perhaps! But he was a gentleman and took me up on my hint so today I have the honor of being here and sharing a recipe that I was inspired to make by the recent Cinco De Mayo festivities.
I saw a number of references to a Mexican street food called esquites which is freshly roasted corn kernels mixed with melted butter, mayonnaise, chili powder, lime juice and cotija cheese. Knowing how much Brian loves corn, I decided to adapt it and when I say adapt, I mean I’ve messed with this thing to the point where I think no self-respecting Mexican cook would claim it. But the flavors in my version suit our palates and the recipe is lightened up enough to make regular appearances on our table. Enjoy and thank you again, Dennis, for letting me be here today!
- 2 Cups cooked corn kernels (if you use canned or frozen kernels roast them briefly in a 400 degree oven until they develop a little color)
- Cup ¼ low-fat mayonnaise
- Cup ¼ low-fat milk
- Cup ¼ reduced fat feta cheese crumbled
- 2 Tablespoon lemon juice
- 2 Tablespoons fresh parsley or cilantro chopped
- 2 Tablespoons chopped red onion
- Salt & pepper to taste
- In a bowl, mix together the mayonnaise, milk, lemon juice and red onion. Add the corn kernels and herbs.
- Fold in the crumbled cheese and season to taste.
- The salad tastes best at room temperature but keep any leftovers refrigerated
Now that is certainly going to be on my table this summer, especially when all the glorious fresh Jersey Corn starts coming in!
