    Chocolate Pate is a wonderful thing, bittersweet, semi-sweet, milk or yes even the non-chocolate white chocolate…..there’s just something so special about chocolate. We can be having a bad day and something chocolate can cheer us up. Life just seems a little better when a piece of chocolate slowly melts in your mouth, making all your endorphins go crazy…. simply magical!

    A few weeks ago I had grabbed one of my older cookbooks and an index card fell out. It read Chocolate Pate, I had not seen that card in quite awhile, and not thought about that silky melt in your mouth piece of chocolate heaven……sigh

    It was about 20 years ago, I had been working at a small Italian restaurant that a friend had opened and somehow talked me into writing the menu and opening the restaurant for him. He wanted regional Italian, and that’s what he got in all its glory…..but sadly we were just a little ahead of our time, many of the dishes were simply not recognized.

    We were going against a small chain of what I like to call Fugazi Italian or American Italian, but that’s what the area had been told was Italian food, and it would take a miracle to change their minds. We did well finding our own little niche, but never quite acquired the business necessary to really take us into prominence, but I had fun and that’s all that really matters!

    I guess you’re wondering what this has to do with chocolate pate? The recipe came from our bartender ( a retired Philadelphia Policeman), who had become a good friend, it had been passed down to him from his Nonna and he said he could think of no one better to entrust his family treasure too.

    I know you’ll enjoy the silky smooth texture of this wonderful pate, and whether you enjoy it with an espresso or just by itself, it will be a decadent indulgence that will make a bad day into a better day, and bring a smile to your face…and that my friends is worth every calorie!

    Chocolate Pate

    For pure decadence, a chocolate lover can’t do better than chocolate pate.  From bittersweet to white chocolate you can make your favorites to have on hand for those special chocolate moments.

    Ingredients

    Chocolate Pate

    • 2 ½ lbs Dark semi-sweet chocolate
    • 6 oz unsalted butter
    • ½ cup strong coffee or espresso
    • 3 oz Chambord
    • 6 egg yolks

    White Chocolate Pate

    • 1 ¼ lb White Chocolate
    • 3 oz unsalted butter
    • ¼ cup heavy cream
    • 1 oz Kahlua
    • 3 egg yolks
    US Customary – Metric
    Prevent your screen from going dark

    Instructions

    Chocolate Pate

    • Melt chocolate in a double boiler
    • add butter and blend well
    • add coffee and Chambord mix until well blended.
    • Remove from heat and stir in egg yolks, until fully incorporated.
    • Strain chocolate through a sieve into a loaf pan lined with plastic wrap.
    • Cool in the refrigerator overnight or for at least 3 hours.
    • Lift out of loaf pan.
    • Chocolate Pate’ should be sliced into triangles to serve.

    White chocolate pate

    • Melt chocolate in a double boiler
    • add butter and blend well
    • add cream and Kahlua mix until well blended.
    • Remove from heat and stir in egg yolks, until fully incorporated.
    • Strain chocolate through a sieve into a loaf pan lined with plastic wrap.
    • Cool in the refrigerator overnight or for at least 3 hours.
    • Lift out of loaf pan.

    Notes

    *Wrap remainder and store in an airtight container in refrigerator for up to 2 weeks.

      Uhm, chocolate; yes please! This looks very delicious! In regards to sponsored give-aways and such I think there is a fine balance. I’m looking for more recipes on a food blog than giveaways, unless you can do both in one post. And, balance applies to ads too! If I can’t see your message through the billboards it’s an issue for me. Thanks for all the great advice!

      I loved your last paragraph about ads! There are a couple of very well known bloggers that I quit following because of all of the ads and sponsored give-aways on their blogs. It’s a real turn-off to me.

      Great recipe. I must try this one. It looks positively scrumptious and would not last long in this house.

      I am a year in and just signing with a company now. It would be nice to make some moolah but I hope it never becomes why I blog. I think those making good money are few and far between. I think at this point I’d be happy to offset the grocery bill a bit. Lol.

      I love foodbuzz but for me it was the not counting Canadian hits that bugged me. Why would I sign with someone who thinks I don’t exist geographically. I hope they change that rule. I would have signed with them in a heartbeat if they did. It’s such a great group of bloggers who use it, very friendly community atmosphere.

      Lots of great info here, especially on the money making offers. The pate does look like the perfect thing to chase the blues away. I have never seen this type of thing before, but I like that touch of liqueur that is in both these recipes-yum! Have a great day Chef.

      Those chocolates look wonderful. I could eat that entire dark chocolate by myself. Thank you for this Ask Chef Dennis. There is so little information out there about Advertising choices so it makes it hard to make a decision what, if any publisher is right for you and your blog. As always, you’ve provided such great insight and more food for thought.

      Hi Chef Dennis! The chocolate pate looks delicious (and your pictures are terrific). I understand the ad dilemma! I’d LOVE to make more $$$ for blogging and I jumped with both feet into FoodBuzz, but I have to say, it’s a good fit and I’m happy here.

      Of course, I wish they’d allow a second ad….but I’ve learned that I can’t have everything….dang it!

      Dennis, thanks for all the wonderful information in this post. The chocolates look absolutely divine and I’d love to have on eto melt in my mouth right now. Also, the ad topic. It is so alluring and confusing all at the same time. Nobody really seems super happy with their ads and so it makes me wonder which one to go with. Since I am a new blogger I don’t feel like its an urgent decision, but I do think about it a lot. I appreciate the insights from you.

      I’m sorry your Italian restaurant venture didn’t work out sounds like you were ahead of your time, but if it led to this recipe then I think it was completely worth it.
      I’ve received a few of those volunteer guest post emails, but none asking for money. I hope no one falls for that.
