    How to make pistachio cranberry scones-

    What could be better than an easy to make scone recipe? Especially when it has white chocolate and pistachios!

    I use to think that making scones was difficult. Then one day I decided to make them for myself. Of course, I didn’t make them the old-fashioned traditional way, I used a food processor and now scones have become a part of our morning routine. With my easy to make scone recipe, they can be on your breakfast table for your family to enjoy this weekend.

    White Chocolate Pistachio Cranberry Scones

    You’re going to love this easy to make scone recipe, it’s simply delicious and so easily adaptable to make all your favorite scones! Try my white chocolate pistachio cranberry scones this weekend!

    Ingredients

    • 2 cups All Purpose Flour
    • 1 tbsp Baking Powder
    • ½ tsp Salt
    • 5 tbsp Sugar
    • Zest of one Lemon
    • 12 tablespoons unsalted butter cold and cut into cubes
    • ½ cup Heavy Cream
    • ½ cup Greek Yogurt plain or Vanilla
    • ½ cup Salted Pistachio‘s
    • ½ cup Dried Cranberries
    • ½ cup White Chocolate Chips
    Prevent your screen from going dark

    Instructions

    • Preheat oven to 400 degrees F. Line a sheet pan with parchment paper.
    • In the bowl of a food processor add the flour, baking powder, salt, sugar, and lemon zest, pulse to blend.
    • Add the cubes of butter and pulse until the butter has been cut into the mixture, it should like coarse grains of sand.
    • In a small bowl, mix together the yogurt, cream, and vanilla until combined.
    • Add to the flour mixture and mix with a spoon until the mixture just starts to come together. Do not overmix.
    • Add the cranberries, white chocolate chips and pistachio’s and gently fold together, Mix just enough to incorporate.
    • Form the mixture into a ball and place on the parchment paper.
    • Use your hands to form the dough into a large circle and flatten about one inch thick.
    • Cut the scones into 8 pieces and separate on your baking sheet*
    • Brush the finished scones with a little cream or milk to get good color as they bake
    • Bake for 15-20 minutes, or until a deep golden brown in color. Transfer to a wire rack to cool.

    Notes

    * by separating the scones into individual portions you get more crunchy exterior, which is the best part of the scone.

      I sure hope you are feeling better! Nothing like a traveling sickness, every one gets their turn I guess.
      Anyhow, these scones do look deliciously tender on the inside and toasty on the outside-just the way I like them. Yum!
      Great info regarding legalities. It is a shame that website hosters do not seem to be too much in tune with what the subscribers are doing.

      I am not a huge scone fan (they end up being too dry for me to finish them), but I love that you incorporated pistachios in conjunction with white chocolates 🙂 Great flavor profile!

      I hope you are feeling better soon! Something must be going around the world because we are all sick over here in Bahrain. Very interesting segment today. I have often felt a bit at odds with the fact that people are pinning from my blog, but I have no way to keep track of who or what they are saying. I love pintrest, but it would be nice to see what is being put out there with regards to my post. And I agree, those pins that list an entire recipe (or how-to for a craft post) just shouldn’t be acceptable. It allows others to see your content without going through the trouble of visiting your blog.
      But on a lighter note, I love those scones. I typically stay away from scones because if made wrong, it’s like sand paper in your mouth. Yours, however, look so light and fluffy!
      Again, I hope you’re getting some sleep and feel better soon!

      You had me at pistachio. Seriously, you know it’s my kryptonite. Going on the must make and eat till I tip over list. Sorry to hear you are sick. I had to run mini-me up to the doc today. She woke up violently ill, so bloodwork and tests took up my day. Probably just an infection but doc figures better safe than sorry. Now I think I have it. So for the record I am blaming Lisa cuz she had it first. Makes no dif I’ve never met either of you but whoever has it first is to blame. Lol! Okay I am rambling, off I go to annoy someone else. Toodles.
      ps I just bookmarked Wendy’s post and plan on sharing it with my readers as well. It’s a great article with useful information.

      Chef Dennis – I hope you feel better soon! The scones look absolutely delicious. All my favorite things are in them – pitachios, Greek yogurt, white chocolate, etc. I think i have all the ingredients to be able to make them soon.

      Feel better soon Chef! I remember feeling lousy and not being able to miss a day of work as a line cook. Plenty of rest and drink tea with honey before bed. I had no idea people were abusing Pinterest that way but thanks for letting us know about the issue. When I see it I will be sure to report it. Off to check out La Phemme Phoodie’s new series.       I love scones! My old favorite was pumpkin scones or date scones but I think white chocolate pistachio leads the pack now.

      I had no idea people were using content from other sites on pinterest. I thought we all used pinterest as a way of saying, “well done!” Any other use is pretty crap in my opinion.
