Wouldn’t you like to say good morning with Huevos Rancheros?

It doesn’t take long to make breakfast extra special and I promise my Huevos Rancheros will be met by smiling faces at your breakfast table. Even the pickiest eaters will love this vegetarian breakfast that takes minutes to make.

How to make Huevos Rancheros

Let’s get started by gathering the ingredients we need for our recipe. In chef speak this is called a mise en place (everything in its place). It’s a good habit to get into and you always have the ingredients you need ready and waiting before you get started.

The first step is really easy and you can make 2 or 20 tortillas for this delicious breakfast dish just by getting everything ready. Get a griddle or frying pan (or barbecue grill) hot and cook each side of the tortilla to brown slightly. You can, of course, use butter to make them extra flavorful but it’s not necessary.

The next step is adding a nice layer of heated refried beans to the tortilla. You could do this in batches if you’re cooking for a large group and keep them in a 200-degree oven while you were cooking the eggs.

The next step is adding a perfectly cooked (or as close as possible) fried egg to the top of the beans. I like my eggs sunny side up, but you can make them over easy if your guests prefer the eggs cooked a little more.

Then it’s time to add all the delicious toppings and sit down to breakfast. Full disclosure I ate three of those….sigh

Huevos Rancheros

Ingredients
  

  • 6 large eggs
  • 6 Mission corn tortillas
  • 1 pouch Isadora refried beans 15.2 ounces
  • 4 ounces Cacique queso fresco cheese crumbled
  • ½ cup Cacique crema
  • 1 cup salsa fresca homemade or store-bought
  • 1 cup guacamole homemade or store-bought
  • 2 tablespoon cilantro chopped for garnish

Salsa Fresca Recipe

  • 1 medium tomato diced
  • ¼ cup red onion diced
  • 1 teaspoon cilantro finely diced
  • 1 lime juice from lime
  • sea salt to taste

Guacamole Recipe

  • 2 avocado Hass variety, ripe
  • ¼ cup tomato diced
  • 1 teaspoon cilantro finely diced
  • 1 lime juice from lime
  • jalapeno or hot sauce to taste optional

Instructions
 

  • On a heated griddle warm both sides of the tortilla till they get a little toasted.  You can use butter, pan spray or a nonstick skillet to heat them.  Set aside till needed wrapped in a clean dish towel.
  • Heat refried beans in pan or microwave 
  • In a non-stick skillet fry the eggs to your cooking preference.  Use butter, pan spray to keep the egg from sticking.  

Salsa Fresca

  • In a mixing bowl add diced tomatoes, onion, cilantro and lime juice. Season with sea salt to taste. * If you like heat feel free to add some diced jalapeno or hot sauce.

Guacamole

  • Mash avocado with a potato masher or fork until you have the desired texture
  • Add the diced tomato, cilantro, and lime juice. Season with sea salt to taste. *If you like heat feel free to add some diced jalapeno

Assembly

  • Place warmed tortilla on dish or serving platter
  • Top each tortilla with a 2-3tablespoon of refried beans
  • Place fried egg on top of the beans slightly off center to show the beans
  • Top egg with salsa fresca, Cacique queso fresco cheese, Cacique® crema and cilantro
  • Serve with your favorite hot sauce and enjoy!

    I always see huevos rancheros when we go out for breakfast. It looks intriguing, but I’m more of a sweet breakfast kind of gal when we go out. At home I prefer the savory breakfast flavors though. So glad I found this recipe. I’ll give it a try this weekend.

    Huevos Rancheros for breakfast sounds perfect to me! I have never tried it before but it looks delicious so I will try your recipe for sure! I think I am a chef too as I always prepare the ingredients mise en place style when I cook haha

    I’ve been living in Texas for years now and I have yet to try Huevos Rancheros. I won’t try them out somewhere because I can’t stand a yolk that isn’t fully cooked. We do “big breakfast Sunday” at our house and now I want to try these soon!
