The smoky, spicy kick from our chipotle mayo recipe makes it the ultimate dipping sauce for crispy fries, and creates the perfect balance of sweet and heat when served with sweet potato fries.

Made with simple ingredients, our chipotle mayo recipe is one of those sauces you didn’t know you needed until you tasted it.

It really kicks up the flavor when added to our fish tacos; it’s actually one of my favorite taco sauces. And it’s a zesty substitute for tartar sauce when serving our Maryland crab cakes.

Ingredients

Ingredients to make the recipe.

Gather the ingredients to prepare our easy Chipotle Mayonnaise recipe. Culinary professionals call this the “Mise en Place,” which means “everything in its Place.”

Setting up your ingredients not only helps speed up the cooking process but also ensures you have all the necessary ingredients on hand to make the recipe.

Can I Make Adjustments to the Recipe?

Absolutely, you can separate the chipotle peppers from the adobo sauce and only use the chipotle peppers for a less spicy version.

For a spicier kick, add a pinch of cayenne pepper or a few drops of your favorite hot sauce to our homemade chipotle mayo.

To enhance the smoky flavor, add a little cumin to the chipotle sauce; it will add a nice earthy undertone. To reduce the smoky flavor, use sweet paprika instead of smoked paprika.

We used regular heavy mayo to make our recipe, but you can use light mayo, olive oil mayo, vegan, or even Miracle Whip to make our tasty chipotle aioli.

If you’re not a big fan of mayonnaise, you can reduce the amount by half and use sour cream or plain Greek yogurt to make up the difference.

How to Make Chipotle Mayonnaise

Follow along with my simple step-by-step instructions to learn how to make Chipotle Mayonnaise in your home kitchen.

Collage showing how to make the recipe.
  • Add the mayonnaise, sour cream, lime juice, and apple cider vinegar to a large bowl.
  • Whisk together to combine.
  • Add the chipotle peppers, smoked paprika, salt, and black pepper to the mixture.
  • Whisk to combine.
  • Use an immersion blender (or regular blender or food processor) to puree the peppers and mix the ingredients together.
  • Blend until the spicy mayo is smooth and creamy.

Place the Chipotle Mayonnaise in an airtight container or mason jar and refrigerate for at least 30 minutes. Up to four hours is recommended to allow the bold, smoky flavors to meld, creating a more balanced sauce.

After one taste, I know you’ll agree that our Chipotle mayonnaise is the perfect condiment for many of your favorite foods. And it’s definitely going to wake up those tired taste buds!

How to Store

Store refrigerated in an airtight container or mason jar for 7-10 days. It does not freeze well.

Recipe FAQs

Can I make this into a thinner aioli?

You can easily adjust the consistency of your chipotle mayo without compromising flavor. Add one tablespoon of water to thin out the sauce without compromising the taste. For a tangy twist, try adding an additional teaspoon of lime juice or apple cider vinegar instead of the water.

Can I make the chipotle mayonnaise sweeter?

Absolutely. Just add a tablespoon of sugar, honey, or your favorite sweetener to the mixture. This will add a touch of sweetness while taming the spicy tang of the sauce.
