Ingredients
  

  • 1 cup mayonnaise
  • 1 tablespoon sour cream
  • ½ cup chipotle peppers in adobo sauce 3.5oz
  • 1 tablespoon lime juice
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • ½ teaspoon table salt to taste
  • ¼ teaspoon coarse black pepper to taste

Instructions
 

  • Add the mayonnaise, sour cream, lime juice, and apple cider vinegar to a large bowl and whisk together to combine
  • Add the chipotle peppers, smoked paprika, salt, and black pepper to the mixture and, using an immersion blender, puree the mixture.
  • If you don't have an immersion blender, you can also make this in a food processor or traditional blender.
  • Place the Chipotle Mayonnaise in an airtight container or mason jar, and refrigerate for a minimum of 30 minutes. Up to four hours is recommended to allow the bold, smoky flavors to meld, creating a more balanced sauce.

Notes

Can I Make Adjustments to the Recipe?
Absolutely, you can separate the chipotle peppers from the adobo sauce and only use the chipotle peppers for a less spicy version.
For a spicier kick, add a pinch of cayenne pepper or a few drops of your favorite hot sauce to the mixture.
To enhance the smoky flavor, add a little cumin to the mayo; it will add a nice earthy undertone. To cut back on the smoky flavor, use sweet paprika instead of the smoked paprika.
We used regular heavy mayo to make this recipe, but you can use light mayo, olive oil mayo, vegan, or even Miracle Whip if you prefer.
If you're not a big fan of mayonnaise, you can reduce the amount by half and use sour cream or plain Greek yogurt to make up the difference.
Can I make this into a thinner aioli?
You can easily adjust the consistency of your chipotle mayo without compromising flavor. Add one tablespoon of water to thin out the sauce without compromising the taste. For a tangy twist, try adding an additional teaspoon of lime juice or apple cider vinegar instead of the water.
Can I make the chipotle mayonnaise sweeter?
Absolutely. Just add a tablespoon of sugar, honey, or your favorite sweetener to the mixture. This will add a touch of sweetness while taking the edge off the spicy tang of the sauce.
