What could be better than a healthy and delicious salad?  Add blackened Salmon and fresh berries and you’ve got yourself a meal to remember!

WHAT INGREDIENTS DO  I NEED TO MAKE BLACKENED SALMON SALAD?

– Salmon filets – Cajun seasoning – Olive oil – Salad mix – Blue cheese – Toasted or candied pecans – Blackberries – Raspberries – Tomatoes sliced – Cooked green beans – Your favorite salad dressing

Preheat oven to 350 degrees. Make candied pecans by adding 1 tbsp of sugar to a sauce pan then adding 2 tbsp of water. Dissolve sugar over high heat, adding the pecans as the water cooks out.

Remove skin from salmon and rinse in cold water. Remove any pin bones that you find  in the filet.

Coat one side of the salmon filet with your favorite Cajun or blackened seasoning. Heat skillet and add olive oil, place seasoned side down and allow seasoning to blacken as the salmon cooks for  2-3 minutes.

Turn over the salmon and sear the other side for 1 minute. Place salmon on baking sheet with a little water and place in oven for 15 minutes.
