– lamb chops – Extra Virgin Olive Oil – sea salt – cracked black pepper – crushed red pepper – garlic – lemon zest – mint – Italian parsley – salted roasted almonds

Start by marinating the lamb chops in a ziplock bag for an hour. After a quick marinating the lamb chops are ready for the grill.

 Grill the lamb chops over high heat for 3 to 4 minutes per side for medium-rare.

Place aluminum foil on your grill when you cook vegetables. This makes so much easier and they still brown wonderfully.

 In a food processor, combine the mint leaves with the parsley,  Pulse for a few seconds.  Add the lemon zest, almonds and garlic (optional) and pulse until chopped.
