Ingredients
 
 

  • 2 cups all-purpose flour
  • ¾ cup sugar
  • ½ teaspoon sea salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup Greek yogurt full fat vanilla or plain
  • cup oil
  • 2 large eggs
  • tablespoon vanilla extract
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 2 cups blueberries fresh or frozen

Instructions
 

  • Mix all the dry ingredients together in one bowl.
  • Lightly beat the eggs and add in the Greek yogurt, oil, lemon zest and lemon juice.
  • Mix all these ingredients until well blended.
  • Add wet mixture to dry mixture and mix just enough to blend.
  • Fold the blueberries into the muffin mix. (do not overmix; it will make the muffins tough)
  • Bake at 375 degrees F for 30 -35 minutes.
  • Yields 6 Large or 12 regular muffins
