2 cups all-purpose flour ¾ cup sugar ½ teaspoon sea salt 1 teaspoon baking powder 1 teaspoon baking soda 1 cup Greek yogurt full fat vanilla or plain ⅔ cup oil 2 large eggs 1½ tablespoon vanilla extract 1 tablespoon lemon zest 1 tablespoon lemon juice 2 cups blueberries fresh or frozen
Mix all the dry ingredients together in one bowl.
Lightly beat the eggs and add in the Greek yogurt, oil, lemon zest and lemon juice.
Mix all these ingredients until well blended.
Add wet mixture to dry mixture and mix just enough to blend.
Fold the blueberries into the muffin mix. (do not overmix; it will make the muffins tough)
Bake at 375 degrees F for 30 -35 minutes.
