Bacon Wrapped Smokies

Bacon Wrapped Smokies are the perfect party appetizer, with cocktail sausages wrapped in crispy bacon and caramelized brown sugar.

Ingredients
  

  • 1 pound bacon
  • 12- 14 oz cocktail sausages little smokies (about 40)
  • ½ cup brown sugar
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper -optional
  • toothpicks

Instructions
 

  • Preheat your oven to 400°F
  • Cut the bacon slices into thirds. This size is perfect for wrapping around the little smokies without overlapping too much.
  • Pat the bacon dry with a paper towel
  • Take a little smokie and wrap a piece of bacon around it. Secure the bacon with a toothpick to keep it in place. Repeat this process until all the little smokies are wrapped in bacon
  • Pour the brown sugar into a shallow dish, add the cayenne pepper and paprika and mix together till fully combine
  • Roll each bacon wrapped smokie in the brown sugar mixture ensuring that it is well-coated. The brown sugar will caramelize during baking, adding a delicious sweet, spicey and savory flavor.
  • Place the bacon wrapped smokies on a baking sheet lined with aluminum foil with a wire rack. Make sure to space them out evenly so they cook properly
  • Bake the bacon wrapped smokies in the preheated oven for 20 - 25 minutes, or until the bacon is crispy and the sugar has caramelized. Keep an eye on them to prevent burning.
  • Once they are done, carefully remove the baking sheet from the oven and let the bacon wrapped smokies cool slightly. Serve them warm with a side of toothpicks for easy grabbing

Notes

For a sweet variation: Drizzle a bit of maple syrup over the smokies before baking or you can also coat the bacon-wrapped smokies with your favorite barbecue sauce and return to the oven for 3-5 minutes
Serve the smokies with a side of our sriracha mayo (spicy mayo) for a kick of heat and creaminess.
