Sugar Cookie Pizza

Ingredients
Large Sugar Cookie
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 8 tablespoons unsalted butter softened, 1 stick
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
Peanut Butter Cream Cheese Frosting
  • 1 ounce package cream cheese softened, 8-
  • 1/2 cup smooth peanut butter
  • 1/2 cup confectioners' sugar
  • 1 1/2 teaspoons vanilla extract
  • pinch of salt
Topping
  • 1/2 cup assorted candy corn
Instructions
Large Sugar Cookie
  1. Preheat the oven to 350 degrees F.
  2. Spray a 9-10 inch round tart pan or a small pizza pan with nonstick cooking spray.
  3. In a medium bowl, whisk together the flour, baking powder and salt.
  4. In the bowl of your mixer, cream together the butter and sugars until smooth. Add in the egg and vanilla and mix until incorporated.
  5. Slowly incorporate the flour mixture into the creamed butter and mix until blended.
  6. Remove the dough from the bowl and press into the prepared pan. (use an offset spatula to spread evenly)*
  7. Bake until the edges just start to brown, 10 to 12 minutes.
  8. Remove from the oven and let cool.
Frosting
  1. In the bowl of your mixer, beat the cream cheese, Peanut butter, sugar, vanilla,and salt until smooth.
  2. Spread evenly on the cooled crust, using an offset spatula. Leave a small edge un-iced to resemble a pizza crust.
  3. Top with festive candy corn and candy pumpkins or other treats of your choice.
Recipe Notes

*dough will be a little wet *If your short on time, buy a pre-made roll of refrigerated sugar cookie dough, and a can of frosting, it might not be quite as tasty but I'm sure everyone will still enjoy the treat!
