Chicken Fried Chicken with Country Gravy

This classic chicken-fried chicken in creamy country gravy is one of the best chicken dishes -- It's sure to become a family favorite in your house!

Ingredients

Chicken

  • 1.25 lb chicken breasts boneless skinless - four breasts 4-5 ounces each
  • 1 cup all-purpose flour
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 2 large eggs
  • ½ cup buttermilk
  • vegetable oil for frying

Country Gravy

  • 3 tablespoon fryer oil or butter
  • 3 tablespoon all-purpose flour
  • 1 cup milk
  • ½ cup chicken broth
  • salt and black pepper to taste

Instructions

Chicken

  • Trim chicken breasts of any fat or skin.
  • Place chicken breasts between two pieces of plastic wrap on a cutting board and pound thin using a meat mallet.
  • Add the all-purpose flour, baking soda, baking powder, garlic powder, salt, and black pepper to a shallow bowl or plate and mix well to combine.
  • Add the eggs and buttermilk to another shallow bowl and whisk to combine.
  • Dredge the chicken breast in the flour mixture, completely coating the breast in the flour mixture.
  • Dip the floured breast in the egg wash, coating the entire breast. Let the excess egg drip off.
  • Dredge the chicken in the flour mixture a second time, getting a good coating of flour on the breast.
  • Add vegetable oil to a large skillet over medium-high heat. Heat the oil until its 325-350 degrees F.
    The oil should be about one-inch deep.
  • Cook the chicken for 5-7 minutes per side until golden brown and crispy. Or until the internal temperature is at least 165 degrees F.
    If your pan is not big enough for all the chicken, cook it in two batches.
  • Remove the fried chicken breasts from the oil and allow to drain on a wire rack or paper towels. Reserve three tablespoons of the cooking oil to make the country gravy.
    If you have to cook the chicken in two batches, keep it warm in a 225-degree oven until ready to serve.

Country Gravy

  • Add the cooking oil and flour to a small pot. Mix well with a wire whisk and cook over medium-low heat for 2 minutes. Don't let the roux get dark.
  • Add the milk to the roux and whisk until fully combined. Continue cooking over medium heat until it begins to get thick.
  • Add the chicken broth to the mixture and whisk to combine. Let the gravy simmer for 3-4 minutes. If the gravy gets too thick, add more water, milk, or chicken broth until you get the desired consistency.
  • Taste and season with salt and black pepper to taste.
  • Ladle the country gravy over the fried chicken and serve with your favorite side dishes.
