- 1 ½ pounds lamb chops 12 pieces
- ¼ cup olive oil
- 1 teaspoon sea salt
- 1 teaspoon cracked black pepper
- 1 tablespoon shallots minced
- 1 tablespoon garlic minced
- 1 tablespoon rosemary chopped
- 1 tablespoon thyme chopped
- 1 tablespoon parsley chopped
Combine the seasonings, fresh herbs in a small bowl and mix them with the olive oil. Add the mixture to a medium size baking dish that the lamb chops will fit in for the marinating process.
Pat the lamb chops dry with paper towels before adding them to the marinade.
Add the lamb chops to the oil mixture and allow to marinate for 20 minutes
Turn the chops over and continue to marinate for an additional 20 minutes.
Place a large skillet over medium high heat and when the pan is hot, carefully place the lamb chops into the pan.
Sear the lamb chops for about 2 minutes on each side.
