WHAT INGREDIENTS DO I NEED TO MAKE A CHICAGO STYLE CHEESECAKE?

– graham cracker crumbs or shortbread crumbs – butter – cream cheese – sugar – all-purpose flour – large eggs – large egg yolks – heavy cream – vanilla – lemon zest

Combine graham cracker crumbs, brown sugar, and melted butter in a mixing bowl and combine the ingredients.

 Place the graham cracker mixture in the bottom of a 10 -inch springform pan. Place the springform pan with the graham crust in the freezer while you make the cheesecake filling.

HOW DO I MAKE A CHICAGO STYLE CHEESECAKE?

 Place the cream cheese into the bowl of a stand mixer and using the paddle attachment, mix the cream cheese on medium-low speed until softened.

 Add the sugar and flour and continue to mix on low until blended (scraping down the sides as needed).  Add the eggs one at a time and mix until just combined.

Add the heavy cream, vanilla extract and lemon zest and mix until combined.

 Remove the crust from the freezer and wrap the springform pan with aluminum foil completely covering the bottom of the pan and about three-quarters of the way up the sides of the pan.
