Cake
- 12 tablespoons unsalted butter room temperature
- 1 ½ cups granulated sugar
- 4 large eggs room temperature
- 1 ¼ cups sour cream room temperature
- 1 tablespoon vanilla
- 2 ½ cups cake flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon sea salt
Cinnamon filling
- 1 cup light brown sugar packed
- 1 cup all-purpose flour
- 1 ½ tablespoon ground cinnamon
- ¼ teaspoon sea salt
- 6 tablespoons unsalted butter melted
Streusel Topping
- 1 cup granulated sugar
- 1 cup all-purpose flour
- ¼ teaspoon sea salt
- 1 tablespoon cinnamon
- 6 tablespoons unsalted butter cold
Cake
Preheat the oven to 350 degrees F.
Grease and flour a 10-inch tube pan.
Cream the butter and granulated sugar in the bowl of an electric mixer fitted with the paddle attachment for 4 to 5 minutes, until light.
Add the eggs 1 at a time, mixing each in well and scraping down the bowl after mixing each egg.
Add in the sour cream and vanilla. Mix well.
In another bowl, sift together the flour, baking powder, baking soda, and sea salt.
With the mixer on low, add the flour mixture to the batter. Mix until just combined.
Use a rubber spatula to finish mixing in any flour that has not been incorporated.
Cinnamon filling
Add the brown sugar, all-purpose flour, cinnamon, and salt to a small bowl. Blend the ingredients together.
Add the melted butter to the mixture and mix well.
Streusel Topping
Add the granulated sugar, all-purpose flour, cinnamon, salt, and cold butter pieces to a large mixing bowl.
Use your hands to mix the ingredients together to form a crumble.
Assembly
Spoon one half of the batter into the prepared tube pan and spread it out until it's somewhat even.
Add the cinnamon mixture on top of the cake batter. Add the remainder of the batter to the pan covering the cinnamon mixture.
Top the batter with the streusel mixture.
Bake the coffee cake for 50 - 60 minutes, or until a cake tester comes out clean.
Allow the cake to cool on a wire rack for 30- 45 minutes. Carefully transfer the coffee cake onto a serving platter.
How to make Cake Flour
To make one cup of cake flour, combine 14 tablespoons of all-purpose flour with 2 tablespoons of cornstarch. Whisk the flour and cornstarch together and then sift the mixture twice. once.
Chef Tip: Start with one cup of all-purpose and then remove two tablespoons. Add two tablespoons of cornstarch to the flour and this equals 1 cup of cake flour.
