Marinated Grilled Lamb Chops with a Mint Pesto

- 1 pound lamb chops I used the porterhouse style
- 2 tbsp Extra Virgin Olive Oil
- 1 tsp sea salt
- 1 tsp cracked black pepper
- 1 clove garlic
- 1 tsp lemon zest
Mint Pesto
- ½ cup mint
- ¼ cup Italian parsley
- 1 clove garlic
- ½ tsp lemon zest
- 1 tbsp salted roasted almonds
- sea salt to taste
Lamb Chops
In a small bowl add the ingredients for the marinade and mix well.
Put the lamb chops in a sealable plastic bag and pour the marinade over them. Move the chops around in the bag so the marinade coats them well. Marinate the lamb chops for 1 hour.
Grill the lamb chops over high heat for 3 to 4 minutes per side for medium-rare.
Mint Pesto
In a food processor, combine the mint leaves with the parsley, Pulse for a few seconds.
Add the lemon zest, almonds and garlic (optional) and pulse until chopped.
With the machine on, add the Extra Virgin Olive Oils in a thin stream and process until smooth. Season the pesto with sea salt to taste.
