Tangerine Curd Recipe

Ingredients

  • 8 ounces unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup tangerine juice or orange juice
  • ¼ cup fresh lemon juice
  • 3 tablespoons lemon zest lightly packed finely grated
  • 12 large egg yolks
  • Pinch of salt

Instructions

  • Cream butter and sugar in stand mixer until light and fluffy
  • Add in egg yolks slowly mix well.
  • Add in salt, lemon juice and zest and mix well
  • Place in heat proof bowl over a small pot of simmering water and using a wooden spoon continue to mix until thickened. (10 - 15 minutes)
  • Allow mixture to cool to room temperature, then refrigerate for at least 4 hours before using.
  • *curd will look curdled after mixing in the juice, don’t worry it will become velvety smooth
