- 8 ounces unsalted butter softened
- 1 cup granulated sugar
- 1 cup tangerine juice or orange juice
- ¼ cup fresh lemon juice
- 3 tablespoons lemon zest lightly packed finely grated
- 12 large egg yolks
- Pinch of salt
Cream butter and sugar in stand mixer until light and fluffy
Add in egg yolks slowly mix well.
Add in salt, lemon juice and zest and mix well
Place in heat proof bowl over a small pot of simmering water and using a wooden spoon continue to mix until thickened. (10 - 15 minutes)
Allow mixture to cool to room temperature, then refrigerate for at least 4 hours before using.
*curd will look curdled after mixing in the juice, don’t worry it will become velvety smooth
