Classic Pumpkin Pie

Pumpkin Pie
- ¾ cup granulated sugar
- 1½ teaspoon pumpkin pie spice more or less to taste. Or you can substitute cinnamon for pumpkin pie spice.
- ½ teaspoon salt
- 2 large eggs
- 15 oz pumpkin puree (one small can) not pumpkin pie
- 12 oz evaporated milk condensed unsweetened
Pecan Pie
Preheat oven to 350 degrees
In the bowl of your mixer beat eggs slightly, and add in corn syrup, sugars, salt, butter, bourbon, and vanilla, mix well.
Add in chopped pecans
Pour mixture into pie crust and bake for 50 -60 minutes or until a thermometer in the center of the pie reads 200 degrees
Apple Cranberry Pie
peel and cut apples into slices or chunks
mix apples with cranberry sauce, brown sugar and cinnamon
add the mixture to pie crust and top with streusel topping
bake for 60-70 minutes at 350 degrees on a foil-lined cookie sheet to catch drippings
Streusel Topping
mix flour, oatmeal, salt, cinnamon and sugars together
add in butter and work into flour mixture until butter is completely cut into flour mixture
mixture should have small clumps and look grainy
Pumpkin Pie
Mix sugar, cinnamon, salt and pumpkin pie spice in a small bowl.
Beat eggs in with your mixer until frothy
Stir in pumpkin and sugar-spice mixture.
Gradually add in evaporated milk (I use only about ¾ of the can)
Pour into pie shell.
Bake at 350 degrees for 50 - 60 minutes or until knife inserted near center comes out clean.
Cool on wire rack and refrigerate until serving
Top with whipped cream before serving.
