Lemon Basil Shrimp with Zucchini Noodles

I love my spiralizer and you'll love the flavorful blend of lemon basil shrimp and homemade zucchini noodles.  Fresh and Healthy is the best way to describe this delicious dish!

Ingredients

  • 16 large shrimp
  • 1 large zucchini
  • sea salt to taste
  • black pepper to taste
  • 2 tablespoons olive oil

Lemon basil rub

  • ¼ cup lemon pepper
  • 2 teaspoons dried parsley
  • 4 teaspoons dried basil
  • 2 teaspoons fennel seeds- roasted and ground
  • 1 teaspoon granulated garlic
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • julienne of mini sweet peppers for garnish

Instructions

Lemon basil shrimp

  • Place peeled and deveined shrimp in a medium-sized bowl and sprinkle with 2 tablespoons of the lemon basil seasoning mix. Let shrimp sit in seasoning for 5 minutes.
  • Place shrimp on skewers, leaving room between them.
  • Place skewers on a hot grill pan (or saute pan) and sear on both sides for 1-2 minutes per side until shrimp are cooked. Set cooked shrimp aside.

Zucchini noodles

  • Using a spiralizer run one zucchini through the machine making zucchini noodles.
  • Heat a large saute pan and when hot add 1-2 tablespoons of olive oil and saute zucchini noodles for about 5 minutes. Season with sea salt and black pepper.
  • Serve lemon basil shrimp over zucchini noodles and enjoy!
  • Garnish with julienne strips of mini sweet peppers

Lemon basil seasoning mix

  • Combine all the spices in a small bowl and store in an airtight jar until needed
