  • 16 large shrimp
  • 1 large zucchini
  • sea salt to taste
  • black pepper to taste
  • 2 tablespoons olive oil
Lemon basil rub
  • 1/4 cup lemon pepper
  • 2 teaspoons dried parsley
  • 4 teaspoons dried basil
  • 2 teaspoons fennel seeds- roasted and ground
  • 1 teaspoon granulated garlic
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • julienne of mini sweet peppers for garnish
Lemon basil shrimp
  1. Place peeled and deveined shrimp in a medium sized bowl and sprinkle with 2 tablespoons of the lemon basil seasoning mix. Let shrimp sit in seasoning for 5 minutes.
  2. Place shrimp on skewers , leaving room between them.
  3. Place skewers on hot grill pan (or saute pan) and sear on both sides for 1-2 minutes per side, until shrimp are cooked. Set cooked shrimp aside.
Zucchini noodles
  1. Using a spiralizer run one zucchini through the machine making zucchini noodles.
  2. Heat a large saute pan and when hot add 1-2 tablespoons of olive oil and saute zucchini noodles for about 5 minutes. Season with sea salt and black pepper.
  3. Serve lemon basil shrimp over zucchini noodles and enjoy!
  4. Garnish with julienne strips of mini sweet peppers
Lemon basil seasoning mix
  1. Combine all the spices in a small bowl and store in an airtight jar until needed
