Easy Sausage Peppers and Onions

Ingredients

  • 1 lb sweet Italian sausage 5-6 links
  • 2 large green peppers or any bell pepper
  • 2 large red peppers or yellow peppers
  • 1 large sweet onion
  • 1 tablespoon olive oil
  • ½ tablespoon kosher salt or coarse sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder

Instructions

  • Remove the sausage from the refrigerator and let it come to room temperature.
  • Preheat the oven to 350 degrees F.
  • Rinse the peppers with cold water, and pat dry with paper towels.
    I like to use a variety of colors for a more colorful and vibrant dish. But you can use any color peppers you like.
  • Cut the peppers in half, then remove the stem and seeds.
  • Slice the peppers into strips about ½ inch wide.
  • Remove the outer layer of the onion, then cut it in half and slice it into pencil width slices.
  • Place the peppers and onions in a baking dish.
  • Coat the peppers and onions with olive oil, then add the seasoning and toss to combine.
  • Place the sausage links on top of the pepper and onion mixture.
  • Place the baking dish on the center rack of the preheated oven and cook for 45 minutes, then remove the pan from the oven.
  • Stir the mixture and roll over the sausage so both sides get browned
  • Cover the baking dish with aluminum foil, and place it back in the oven, and cook for an additional 15 minutes.
  • Remove the baking dish from the oven, and use a slotted spoon or tongs to remove the sausage, peppers, and onions from the pan.
    Serve with your favorite rolls, or slice the sausage and serve it with pasta with red sauce.
