Slow Cooker BBQ Chicken
Slow Cooker BBQ chicken has to be one of the most delicious dishes I prepare using my slow cooker. My tangy sweet brown sugar barbecue sauce blended with the tender shredded chicken is simply heaven on a plate or bun.

- 4 lbs chicken thighs skinless/boneless
- ¼ cup vegetable oil
- 5 cloves garlic finely minced
- ½ cup brown sugar tightly packed
- 1½ teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon granulated onion
- 2 cups barbecue sauce Sweet Baby Rays (plus more as needed)
- ¼ cup apple cider vinegar
- 2 tb worcestershire sauce
- 12 brioche buns for sandwiches
- 1 lb cole slaw for sandwiches
Add the vegetable oil, chopped garlic, brown sugar, apple cider vinegar, barbecue sauce, Worcestershire sauce, and seasonings to a small bowl and mix well to combine.
Pat dry the chicken thighs with paper towels.
Place the chicken thighs in the slow cooker and cover them with the barbecue sauce.
Turn the slow cooker on the high-temperature setting and cook for 2½ to 3 hours. If you prefer using the low-temperature setting, cook for 5-6 hours.I prefer using the high-temperature method for chicken. When the cooking process is finished, remove the chicken from the slow cooker. Replace the lid to keep the barbecue sauce warm until ready to serve.
Use two forks to pull the chicken apart. Don't make the shreds too small.
Return the shredded chicken to the slow cooker, making sure to coat all the chicken with the sauce.
Let the chicken simmer in the slow cooker for 30 minutes before serving.
Toast the brioche buns.
Serve the pulled bbq chicken on the toasted brioche bun with cole slaw. Garnish with a dill pickle spear and chips.
