My lemon curd has a wonderful fresh lemon flavor with the perfect amount of sweetness to balance the tanginess of the lemon juice.

WHAT INGREDIENTS DO I NEED TO MAKE LEMON CURD?

– Egg yolks – Granulated sugar – Lemon zest  – Fresh lemon juice  – Salt (omit if you use salted butter) – Unsalted butter

Add the egg yolks, granulated sugar, lemon zest, lemon juice, and salt to the bowl on top pot of the saucepan (double boiler).

Instructions

Whisk the mixture until thoroughly blended. Continue to whisk as the curd cooks.

Whisk over the heat until the mixture becomes thick, about 10 minutes. Remove from the pan.

Off-white Section Separator

Cut the butter into 6 separate pieces, and whisk them one at a time into the lemon curd.
