WHAT INGREDIENTS DO I NEED TO MAKE Chicken Rollatini?

– Arugula leaves – Pistachios – Romano cheese – Olive oil – Garlic  – Chicken breasts  – Gorgonzola crumbles – Seasoned bread crumbs – Extra Virgin Olive Oil

To make the pesto, clean and wash your arugula leaves, pat dry in paper towels.

Instructions

In the bowl of your food processor, add the arugula, garlic clove, and pistachios. Pulse until fully blended and finely chopped.

Add the Romano cheese and pulse. Add the olive oil, in a slow stream as you pulse the mixture.

For the rollatini, rinse chicken breasts and pat dry with paper towels. Lay them flat on cutting board.

Heat enough oil in a large skillet to cover the bottom of the pan.  Place the pork chops in pan when the oil shimmers.
