My Marinated Grilled Lamb Chops will make you smile!

What’s on your grill this summer?

I am by no stretch of the imagination a Grill Master, but I do enjoy trying different foods and cooking methods on my grill. But I always seem to come back to the basics when it comes to grilling or roasting my favorite meat, seafood, and vegetables.

And for me, the basics means, Extra Virgin Olive Oil, sea salt, cracked black pepper and a mixture of garlic and herbs depending upon my mood. It’s simple, it’s delicious and it’s healthy. What more could you ask for?

Mise en Place

No matter what I’m making I always gather my ingredients before I start. This is called a Mise en Place or everything in its place. It’s a great idea for home cooks to do, that way when they want to make the dish again they can simply look at the picture to see what they need for that particular dish.

Think of it as your recipe in picture form. Include a picture of the finished dish and you’ve got your own personalized cookbook.

How do I make Marinated Grilled Lamb Chops?

Start by marinating the lamb chops in a ziplock bag for an hour. After a quick marinating the lamb chops are ready for the grill.

Let your meat come to near room temperature before cooking (20-25 minutes unrefrigerated). This will help it cook more evenly.

Then it’s time to cook up deliciousness on your grill.

To get those lovely grill marks on the meats you cook, make sure your grill is really hot and the grates are clean. Marinating puts a thin coat of oil on the meat keeping it from sticking.

To get those crosshatch marks, rotate the meat 180 degrees so it’s facing the other direction and place it on a new spot on the grill.

I love cooking vegetables and usually, I cook up whatever I have on hand. Now it’s not entirely random, because I pick veggies on my shopping trip that looks the freshest. So no matter how I cook them I have them ready.


Back to the basics, doing a quick marinade with Extra Virgin Olive Oil, sea salt, and black pepper. This also works very well in the oven.

Place aluminum foil on your grill when you cook vegetables. This makes so much easier and they still brown wonderfully.

Marinated Grilled Lamb Chops with a Mint Pesto

Ingredients
  

  • 1 pound lamb chops I used the porterhouse style
  • 2 tablespoon Extra Virgin Olive Oil
  • 1 teaspoon sea salt
  • 1 teaspoon cracked black pepper
  • 1 clove garlic
  • 1 teaspoon lemon zest

Mint Pesto

  • ½ cup mint
  • ¼ cup Italian parsley
  • 1 clove garlic
  • ½ teaspoon lemon zest
  • 1 tablespoon salted roasted almonds
  • sea salt to taste

Instructions
 

Lamb Chops

  • In a small bowl add the ingredients for the marinade and mix well.  
  • Put the lamb chops in a sealable plastic bag and pour the marinade over them. Move the chops around in the bag so the marinade coats them well. Marinate the lamb chops for 1 hour.
  • Grill the lamb chops over high heat for 3 to 4 minutes per side for medium-rare.

Mint Pesto

  • In a food processor, combine the mint leaves with the parsley,  Pulse for a few seconds.
  • Add the lemon zest, almonds and garlic (optional) and pulse until chopped. 
  • With the machine on, add the Extra Virgin Olive Oils in a thin stream and process until smooth. Season the pesto with sea salt to taste.

    The lamb chops were great for me never done lamb this way before but as lamb is my favourite meat I will always do it like this

    I love these caramelized veggies. Your pesto is unique and I’ll try it out. I don’t like parsley that much but it seems a good combination with mint and almonds…

    I have never grilled lamb chops before but I will never want to cook them any other way. The marinated lambs chops were great alone but that mint pesto is the perfect compliment . This is a new favorite at my house .

    Is there a better way to cook lamb than grilling? There is so much flavor preserved when using a grill for it – definitely the recipe to enjoy over and over again!

    I grew up eating lamb with mint sauce so I love the idea of a mint pesto. I think it woud be better, fresher and tastier!
