prep your veggies and remember to cut them in some different shapes. People eat with their eyes and it always helps to keep your food interesting and attractive.
in a saute pan add the olive oil and sliced garlic and saute 1-2 minutes so not let it burn!
Now add all of your veggies and toss in the pan to coat with olive oil and saute for 4-5 minutes until barely done.
Add the pasta and toss, sprinkle with grated Romano cheese and serve immediately.Not only was this a delicious meal that made us wish even more for summer time, it was a healthy meal.
The Mahi-mahi was moist and tender, it had such a nice mild flavor that lent itself perfectly to the light seasoning and roasting and honestly we could have made a meal out of the pasta primavera alone. It was so flavorful with the spinach pasta and crisp fresh vegetables, the Romano cheese offering just enough added flavor. My wife’s only complaint was that we were not dining outside, but we will be soon enough!
