Today I am proud to welcome you to the new addition of More Than A Mount Full – A Culinary Journey. This was a very difficult decision for me, but I knew that I would not be at the Mount forever and what had started as lark, had become so much more, not only in content, but as part of my life. When I began my blogging adventure in November of 2009, I had no idea or expectation that it would evolve into anything like its become, or that I would be so passionate about sharing my creations with you. I tried to pinpoint what changed for me, why this blog became so important and such a big part of my life, and the only reason that I could come with were the relationships and friendships that had developed because of my blog.
We are a community, we are neighbors and we are friends. We rally to support each other when times are tough, and we laugh together in happier times. We share birthdays, anniversary’s, births, and the passing of loved ones. We take each other on virtual vacations, enjoy five star restaurants and local pubs, and occasionally when the stars align we get to meet each other in real time, and that my friends is an incredible moment. Sometimes it starts out a bit awkward, but as soon as we start talking shop and asking about family, were just old friends getting to spend some time together. The connections we make, and the relationships that build from those connections are what set us apart. We are foodies and we love what we do, we love our families and our friends and can think of no better way to celebrate the joy of life than by sharing a meal with those we love. These are the ties that bind us. This is what makes us family.
Last year as many of you remember I had a slight problem with zucchini blossoms, oh how I love my precious…..sigh, and I am lucky enough to find them every week in my local farmers market in Collingswood. While I have been testing new recipes, and pushing the limits, some that I created last year are just too good not to recreate and share with you once again. Last year I debuted my Cannoli Blossoms, and since were celebrating I thought what better way than a sweet treat with my trademark squash blossoms. I do hope you can find my precious, and get to try these lovelies, I promise they will make quite an impression when you serve them to your friends and family!
- 12 Zucchini Blossoms
- ½ Cup Mascarpone
- 1 Cup Ricotta Cheese
- ½ Cup Super Fine Sugar
- 1 Tbsp Lime Zest
- 1 Vanilla Bean (scraped)
- 1 Tsp Pure Vanilla Extract
- ½ Cup Semi Sweet Chocolate (chopped into small bits)
- 8 oz Bitter Sweet Chocolate (cut into small pieces to melt)
- Blend mascarpone, ricotta, and superfine sugar in the bowl of your mixer.
- Add lime zest, vanilla, and vanilla bean. Mix well
- add in chocolate bits. (mini chocolate chips may be substituted)
- place finished cannoli cream into pastry bag and pipe into the center of the zucchini blossom.
- Form blossom around cream and refrigerate for 30 minutes;
- While cannoli blossoms are chilling melt chocolate in a small metal bowl, over a pot of boiling water.
- Keep chocolate warm until the blossoms are ready
- Dip each blossom in the melted chocolate, and place on a baking sheet that has been sprayed with cooking spray(this will make them come off the pan easier)
If you have any cannoli shells around make a little extra cream and fill those too. Luckily I always keep some on hand for just such an occasion….lol

Luckily I found a new friend early on in the process (what an ordeal that was), but you know when you meet the right person. I talked to quite a few designers before I decided, and Melissa from Fine Lime Designs impressed me the most, she made me feel comfortable about the process, and as we went along made me feel more like a friend then just a client.
